Chef Marc de Passorio obtained one star in Michelin Guide 2015 for his restaurant L’Esprit de la Violette in Aix-en-Provence. This large villa boasts a Zen and relaxing atmosphere in an elegantly designed room looking out over an antique garden planted with century-old trees. Chef Marc de Passorio is not only known for combining research, technique and precision into his cooking, but also his feeling for flavors and ingenuity for his work. Each dish is a new take on its original guise. He can concoct modern, colorful and devilishly creative cuisine, which leads diners from one lovely culinary surprise to the next. He especially found his inspiration to work with spices and seasoning during his stay in Réunion Island near Madagascar.
